We now found the right partner who understands and shares our passion for the products : Chabrol Wines.

The owner of Chabrol Rex Neve, quite the non-conformist, shook up the traditional wine establishment when he opened the first Chabrol in Amsterdam on his fluorescent sneakers. This has been characteristic for his vision for Chabrol. Therefore, Chabrol is always on the look-out for new concepts that appeal to the same sentiments as they do; with the utmost regard for authenticity.
Chabrol mainly works with smaller domaines, bodegas and wineries. When traveling, Chabrol is always searching for passionate winemakers who, above anything else, strive to make authentic, pure, balanced wines. Wines that are true to their terroir and history.
From accessible house wines, to more complex bio-dynamic and superb rare wines from special winemakers who have earned the highest classifications. Always wines in which you can taste the winemaker’s love and drive and of which every single bottle tells its own, unique story.
Wines for the Summer menu
Rosé des Côteaux d’Aix en Provence, 2016
The 50-year-old vineyard of Château Paradis is located in the middle of the Provence. The owners Xavier and Odile Tieblin are very proud of their Provence roots and make sure the special terroir of the vines is to be found in their wines. The unique combination of soil types (chalk, clay, sand and rocks) give the Paradis wines its special characteristics.
The clay gives the wine its strength and structure, the sand creates finesse and subtle flower tones whilst the suppleness, roundness and fruits in the wine springs from the chalk.
The rosé is light and salmon coloured and has aromas of white flowers and fruits with subtle herbal tone. A beautiful balance of roundness, freshness and a long fruity finish. Perfect as a fresh aperitif to awaken your palate as well as a well-structured companion for barbecue dishes due to its complexity.
Perfect match : The chicken, the lamb and the porc.

Blanc, Côtes du Rhône Villages Valréas, 2015
410 meters high, across from Mont Ventoux, south-east of Valréas, you can find the vineyards of Stéphane Vedeau’s Clos Bellane. Stéphane grows classic Rhône grapes and for the Clos Bellane Valréas he chose a blend of Marsanne and Viognier. T
he vineyard is located on a hillside and because of the combination of the altitude typical for Northern Rhone wines and the grapes which are typical for the South of the Rhône, the vineyard is truly unique. Stone fruits in the nose, herbal tones as well as fresher citrus. The wine has power, it’s bodied, but has beautiful acidity that keeps the wine fresh.
Because of its elegant balance between roundness, freshness and strong character it combines well with fish as well as meat. Therefore, a perfect white wine for a barbecue evening during which different dishes will be enjoyed.
Perfect match : Duck and Salmon Rillettes, Salmon with asparagus.

Domaine de la Métairie d'Alon
Pinot Noir, Haute Vallée de l'Aude, 2013
This Pinot Noir from Jean-Louis Denois is grown in one of the coolest vineyards in the Languedoc on high-altitude terroirs in the upper valley of the Aude in the communes of Magrie and Limoux. Peppers and floral with notes of fruity cherry-raspberry and green tones such as conifers and eucalyptus.
Beautiful harmonious balance between tenderness and strength, velvet tannins and a long fresh and peppery finish. Can be served a little chilled on long summer evenings. Perfect for grilled meats and cheese.
Perfect match : Beef and Duck rillettes.
